I’m designing some printables and I want to offer letter size paper(8.5” x 11”). However the letter size on Figma is default at 612x792
What’s the difference? Do I have to convert it back to 8.5" X 11" which is 850 x 1100 every time I design?

Since Figma is vector based, paper size is set to 72 ppi (pixels per inch) thus the 612x792 size you see.
As long as you export the frame in a vector-friendly format (e.g. PDF) it should upscale just fine to any print size. No conversion is necessary.
Now if you export the frame as a raster image (e.g. PNG or JPG) you should export it at 3x or 4x to get an effective ppi of 216 or 288. This resolution should be good enough for most consumer-level printers.
(If you’re looking for professional-level printing, you should always export as PDF for maximum quality.)
All this said, if you have raster images as part of your layout, make sure they are imported in high-resolution so that when they are downscaled, they will print crisply. Ideally, to get high-resolution printing of images, I’ll shrink them to 1/3 to 1/4 of their original size after importing them.
