It would be a great productivity boost to have shortcuts to Fold/Unfold the Layers tree from the root level. It’s a default behaviour in all coding IDEs and helps to navigate complex folder structures very easily. Figma would definetly benefit from that.

Also, to expand/collapse all nested layers, hold Alt(Opt) and click on the triangle to the left of the layer name.
