I mixed up the hotkeys and accidentally pressed ctrl+shift+o. All the slides in my project turned into curves. Is there any way to undo this? I tried ctrl+z and also go back to previous versions of the project, but it didn't work((

It sounds like you accidentally enabled outline mode.
You can use the same keyboard shortcut to disable show outlines: Ctrl + Shift + O
