I am the team owner and upgraded to the Professional plan.
However, I cannot assign myself an editor seat in any team.
The editor option is not selectable and editing is blocked with
“an admin needs to update your seat”.

Please fix the seat provisioning on your side

Hey @Ben Raith, thanks for reaching out! Unfortunately, being the team owner doesn’t automatically mean you have can edit permissions. You can be a team owner but still have a can view permissions on the team.

The owner is the person that created the team. Admins are team members that have extra administrative right within the team. This allows them to manage any team settings, including any shared libraries. On the Professional plan, team admins also manage the team's subscription.

You’ll need to ask the admin to change your team permissions by following these steps.

  1. Open the file browser by logging in to your account at figma.com. If you’re in a Figma file, click the  Figma menu > Back to files.
  2. Navigate to the team: On the Professional plan, select  All projects from the left sidebar.
  3. Next to the team name, click  Open team dropdown.
  4. Select View members.
  5. Use the dropdown next to each user to update your team permissions.

Figma’s help article explains this in more detail here: https://help.figma.com/hc/en-us/articles/360039970673-Team-permissions

Hope this helps, please let me know if you have any further questions! Happy to help.
