Screenshot attached, this keeps happening. Where is auto layout? why doesn’t it work in this case? and in dozens of other cases I look everywhere for it, My entire workflow is based around auto layout. What am I missing?

I completely understand your frustration here. Please note that Auto layout is only supported on frames. You’ll want/need to wrap your elements in a frame in order to see the option for Auto layout.
