Currently it appears I need to click onto each color and change it manually which is a pain. I would love if I could just adjust all colors in the gradient with a hue slider.

Figma now support Variables for gradients too. If you don't want to use Variables or its pain in the ass to swap HEX to variable for all gradients Ruri Colors will come handy.
