When downgrading from Organization to Professional, I’ve understood that open branches will no longer be accessible from below post’s answer.
What will happen to archived branches? We do not need to edit it, but would it be possible to access them after being downgraded to Professional?

After moving from an Organization plan to a Professional plan, open branches will no longer be accessible. This means you won’t be able to view the branch. However, your main file will remain fully available and continue to function as usual, it'll be just a standalone file.
Since you mentioned you don’t need to edit them, I still recommend merging any branches that contain changes you may want to reference later before downgrading, just to be safe.
