I’m trying to create a prototype of a form that simulates text inputting.
I’ve managed to simulate this, but there are two text values in the component, and for some reason, I can only change one, the field name (Street), not the dummy input content (e.g. Willow ave).
Can anyone much savvier than me spot a mistake I’ve made somewhere, please?

Therefore, you need to follow these rules and just hide rather than remove layers from the variants. That is, all variants must contain all the necessary layers to preserve overrides.
