The prototype and design tab has disappeared and been replaced with Figma Slides - I really need to prototype what I am doing and create interactions - I am in a frame.

You're using the Figma Draw, no the Figma Design, that is why the prototype option does not appear.
Swap to Design (the middle one) at the bottom bar.
