Ok finally having dark mode in Figma is amazing but being able to override a document’s background color to go along with it would be even better and thus without actually changing the background color for other users. Right now it’s kind of jarring o open a document with a light gray background when the UI is darker.

Agreed. I feel like I am already annoying my non-dark-mode-using teammates by changing the canvas color to something darker. 
Totally agreed, its called personal preferences
Well, actually if you start a new design file, the document’s background comes in dark!
For existing light mode documentos, turning to dark doesn’t update it background.
Kind of annoying.
