The text in the Asset/Component panel is inconsistent. Sometimes the text is readable and dark, other times it is light and I can hardly see it. I am not sure what would be causing this issue.

I too am having this issue and can’t tell what it determining the colour of the text. Components on the same canvas background have different text colour in the assets panel.
My work colleagues also confirmed they are experiencing the same issue/behaviour.
I noticed that too regarding components on the same canvas background. It seems to work better in light mode insofar as you can always see the text, but even in light mode some text gets a background behind it which assists in you being able to see the text better, and some pieces of text don’t. It is very strange…
Same issue here. Switching to list view helps a bit. But when using any kind of dark theme, the focused item in the list view has same white-on-white legibility problem.
It wasn’t always like this though
