We currently have the Professional plan and would like to upgrade to the Organization Monthly plan but when using the upgrade option, the Monthly is not listed.
I have a case [#936148] but no response yet.

Paying on a monthly basis for the Organization plan is not supported.
When you first sign up for a Figma Organization, Figma will bill you on an annual subscription . Figma will issue seats based on the total number of Editors you have in your Organization.
The number of Editors in your Organization will change over the billing period. To account for any extra Editors, Figma has a true-up process. More on that here.
