I’m unsure of the correct terminology, but the shapes/text boxes/elements are just snapping to this layout and I want to understand how I can change this, so that I have flexibility… or can someone tell me what this feature is called so I can learn how to use it?

You can disable snapping in the preferences menu or quick actions:
managed to disable this, but still i can’t move the button from left aligned to say center of the box , it wants to sit left aligned?
Maybe you enabled Auto Layout in the frame where this object is nested?
ah yes it was auto layout issue!
